This recipe for Turmeric Chickpea and Coconut Rice came together in 30 minutes. It’s perfect for a weeknight dinner and is both filling and full of flavor. Or in my case perfect vegan comfort food while being snowed in.
So today the unthinkable happened. It actually snowed in Savannah. LOL! The last recorded major snow storm that hit Savannah was in December of 1989. It’s cold and it’s snowing. What is a girl supposed to do? Cook of course.
I found a recipe for turmeric coconut rice online a week ago and thought that today would be a perfect day to try it out. Of course I had to put my spin on it. But I would like to thank Healthier Steps for the awesome inspiration. This dish was so good and packed with flavor.
Here are my tweaks. I used dried thyme instead of fresh. I omitted the carrots and green onions and added cooked chickpeas and ginger. The corn bread was a after thought but it pared perfectly with the rice. I definitely look forward to making this again in the very near future. Next time I think I will add some red peppers to give it a little more flavor and a pop of color. Overall I’m so very pleased and my tummy is happy.
Nothing like being snowed in with some hot and delicious comfort food that is oh so healthy.
Heat oil in a large pot on medium high, cook onion and garlic until soft about 3 minutes.
Stir in turmeric, ginger, green onions, thyme, carrots and cook for a minute stirring constantly.
Add rice and stir until rice is fully coated yellow. Add coconut milk, water or vegetable broth, cayenne pepper and salt. (Make sure you add enough salt until it is flavorful).
Bring to boil, cover and reduce to simmer on low for 15 minutes, Add the chickpeas, stir and allow to simmer for another 15 or until the rice is tender.
Remove from heat and keep covered for about 10 minutes.
Fluff with a fork, stir in cilantro leaves and a squeeze of lime juice.
