Mango – Strawberry Fields Vinaigrette

This recipe for Mango – Strawberry Fields Vinaigrette is definitely a summer time favorite. It’s lite, cool and refreshing. However, with that being said this is one of my favorite homemade dressings that I use year round.

It is perfect for those who are looking for a delicious low fat dressing. I am trying to significantly reduce my oil intake so I often will omit the oil from the recipe. The great thing about this recipe is that it can be savory or sweet. The mangoes and strawberries compliment one another. The dressing is full of flavor but not overly sweet.

Of course the sweetness and desired level of spiciness can be adjusted to fit your particular taste and palette.

I especially enjoy this dressing on arugula salad with toasted walnuts and chopped red onion. YUM! Have fun with this recipe! Don’t be afraid to experiment! Enjoy! 🙂

Ingredients
Main Ingredients
  • 2 Mangoes
  • 4 strawberries
  • 2 key limes Use only the juice
  • 1/4 cup Spring Water
  • 1/2 teaspoon thyme or basil
  • 2 tablespoons chopped red onion
  • 1 teaspoon Dijon Mustard
  • 1/4 cup Balsamic Vinegar o Champagne Vinegar
  • 1 teaspoon Agave or Date Syrup Adjust to taste
Optional
  • 1/2 Chili Pepper I added a whole and boy does it give the salad dressing some major kick.
  • 2 tablespoons Olive or Grapeseed Oil

Instructions
  1. Place all ingredients in your blender and blend until all ingredients are blended well.
  2. Pour your dressing into a clean glass jar and store in the refrigerator for up to two weeks.
  3. Use on your favorite salad recipe or as a dipping sauce. Enjoy!
Recipe Notes
  • Adjust your quantities to suite your taste and yield. There is no wrong combination.
  • Salad dressing will last up to 2 weeks in the refrigerator.
