Marinated kale, kale chips, sauteed kale. Let’s face it! I have become a kale fanatic. So today, I would like to share with you a recipe for marinated kale salad. The salad is totally raw. Keeping it raw means it has a great texture and maximum nutrition in each bite. And once the salad is put together the color is amazing.

One of my favorite spices is cumin. I love the taste of Cumin as it has a very distinctive flavor with an earthy, nutty, spicy taste with somewhat bitter undertones and a warm, penetrating aroma with hints of lemon. I would venture to say that this dish is like an eclectic party in my mouth because it has so many wonderful and diverse flavors.

For me it’s like having a little piece of heaven right here on earth. This recipe is an old favorite with a new twist. Before I transitioned to veganism I would make this quite often and would add in feta cheese. I also used Panera’s Fuji Apple dressing.  I tossed the feta and the pre-made dressing and replaced with my rendition that is full of spice. I’m so that I did! 🙂

Ingredients
Orchard Apple Vinaigrette
  • 1 1/2 apples diced
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon tumeric optional
  • 1/2 teaspoon Sea Salt to taste
  • 1/4 teaspoon Black Pepper
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon balsamic vinegar
  • 1-2 tablespoons grapeseed or olive
  • 1 teaspoon Dijon Mustard
Kale Salad
  • 5 cups Kale washed, drained and chopped.
  • 1/2 cup walnuts
  • 1/4 cup chopped red onion
  • 1/4 dried cranberries
  • 1 apple chopped

Orchard Apple Vinaigrette
  1. Place the apples, cumin, cinnamon, turmeric, apple cider vinegar, balsamic vinegar, mustard, sweetener, oil and salt and pepper in a blender and blend until very smooth.
  2. Taste and adjust the seasoning and sweetness of the vinaigrette. If you prefer the vinaigrette to be sweeter just add a little more agave or date syrup.
  3. For a thinner dressing, simply add a couple teaspoons of water and blend again.
For The Salad
  1. Put chopped kale in a large bowl and pour the vinaigrette over the leaves. Massage the vinaigrette into the kale for about 5 minutes. The size of the kale will decrease significantly and you should be able to feel the kale becoming more tender.
  2. Once the kale and vinaigrette is well combined, toss in the walnuts, cranberries chopped apples and red onions. Season with a bit of salt and pepper if desired.
Recipe Notes
  • Place in the refrigerate to chill a couple of hours before serving.
