Kale and Artichoke Pizza! Oh My! We all love a great slice of pizza from time to time! And I truly believe that this one would give Papa John’s and Pizza Hut a run for their money. This baby is piled high with lots of wholesome goodness. And it’s so versatile.  For this recipe I used the Classico Fire Roasted Pizza sauce, which amazing by the way.

Classico combined fire roasted tomatoes with basil and garlic to create a rich, smooth pizza sauce with a subtle, smoky flavor. It’s zesty without the overkill.

If you’re tired of the same old pizza give this one a try. It’s not greasy, yeast free and of course vegan.  One of the added benefits is this pizza leaves you feeling full and satisfied without the guilt.

Ingredients
Crust
  • 1 1/3 cup Organic Spelt Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Sea Salt
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Basil
  • 1/2 teaspoon Oregano
  • 2 tablespoons Olive Oil
  • 8 tablespoons Spring Water
Toppings
  • 1 cup Pizza Sauce Classico Fire Roasted Pizza Sauce
  • 1 cup Sauteed or Steamed Kale
  • 1/2 cup Artichoke Hearts
  • 1/2 cup Chopped Roma Tomatoes
  • 1/2 cup Chopped or Sliced Red Onions
  • 1 tablespoon Crushed Red Pepper Optional

Instructions
  1. Mix the dry ingredients.
  2. Add 2 tablespoons of olive oil.
  3. Slowly add a tablespoon of water at a time and start kneading the dough for about 60 seconds.
  4. Let the dough ball sit in a covered bowl for 10-15 minutes.
  5. Preheat the oven to 200°C 400.
  6. Roll out the dough on a well-floured surface, if you like your base fairly thin roll it out to a diameter of 12-14 inches.
  7. Prick the crust multiple times with a fork to prevent bubbles forming in the dough.
  8. Bake the crust for about 12 minutes.
  9. Add toppings as desired and bake on the bottom rack for a further 15-20 minutes until the ingredients are cooked.
  10. Enjoy!
