Hemp Seed Chocolate Coconut No-Bake Cookies 

These delicious hemp seed chocolate no-bake cookies are super soft, chocolate-y, decadent and most importantly they’re vegan! Who says you can’t eat chocolate.  You can’t say you don’t love Chocolate; what’s not to love?! And don’t say it’s not healthy for you. These no bakes are made with 100% raw organic cacao powder.

They are packed with the nutritious goodness of hemp seeds and are super simple to make. I was craving something sweet last night and whipped these up in no time. One pot and a few healthy ingredients and voila! The taste is reminiscent of eating a Mounds Bar with a slight hint of peanut butter. I fell hard for these tasty treats as they’re so incredibly delicious. My plan is to wrap them individually and store them in the freezer and when I need a chocolate fix I can easily pop one out to savor.

Ingredients
  • 3/4 cup Plant Based Milk
  • 1.5 cup Date Sugar or Agave
  • 3/4 cup Coconut Oil
  • 1/4 cup Raw Organic Cacao Powder
  • 2 teaspoons pure vanilla extract
  • 1/2 cup Peanut Butter
  • 2 cups Rolled Oats
  • 1 cup Raw Hemp Hearts
  • 1/2 cup Shredded Coconut

Instructions
  1. In a saucepan whisk together the almond milk, coconut sugar, coconut oil, and cacao powder on medium heat. Stir occasionally and let the mixture warm up until it just comes to a simmer. The date sugar should be fully dissolved.
  2. Remove from the heat. Stir in the vanilla, peanut butter, rolled oats, coconut flakes and hemp seeds until fully incorporated.
  3. Using a spoon or a cookie scoop, dollop the mixture into your perfect cookie size onto a parchment-lined baking sheet.
  4. Place into the refrigerator for 2 hours or until the cookies are set. Alternatively they can be put in the freezer to set.
  5. Store in a container in the fridge.
