Cinnamon Spice Chocolate Chickpea Blondies

Cinnamon spice and everything oh so nice. If you’re tired of the same old desserts this recipe will help shake things up a bit!  I’m still fairly new to this whole vegan way of life.  One area that has been challenging is learning how to bake without eggs and dairy. I realize that finding the right ingredients and substitutions can sometimes be a bit overwhelming. But this recipe was surprisingly easy.

With the holidays rapidly approaching these tasty delights are perfect crowd pleaser. They are super healthy and have the right amount of sweeties. And be assured that these babies are dairy free, egg free, refined sugar free, soy free, gluten-free and vegan. What’s not to love? I would dare to say even non-vegans will enjoy this tasty treat.

But for now let’s keep our main ingredient a secret for now. Once your friends and family take a bite, they will be able to guess that this dessert secret weapon is chickpeas. It is my sincere hope that you enjoy this recipe as it was prepared with love from my home to yours. ~Bon Appetite~

Ingredients
  • 15 oz Cooked Chickpeas
  • 1/2 cup Peanut Butter or Other Nut Butter
  • 1/4 cup Old Fashioned Oats
  • 2/3 cup Date or Coconut Sugar
  • 1/4 cup Agave
  • 1 tablespoon Cinnamon
  • 1 tsp Vanilla Extract
  • 1/2 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/4 tsp Sea Salt
  • 1/4 cup Organic Chocolate Chips
  • 1/4 cup Chopped Walnuts optional

Instructions
  1. Preheat oven to 350 degrees F.
  2. Lightly spritz an 8x9 baking dish with oil or line with parchment paper. Alternately you can use silicon bake ware.
  3. Combine all ingredients, except the chocolate and walbuts, in the bowl of a food processor and puree until smooth.
  4. Pour the batter into the prepared baking dish.
  5. Once smooth, add chocolate chips and walnuts and mix by hand.
  6. Sprinkle a few more chocolate chips on top.
  7. Bake in your preheated oven for 20-30 minutes until the edges just pull away from the pan, the top is set and slightly golden brown.
  8. Let cool for at least 15 minutes. The blondie's will continue to firm up while cooling.
  9. Then savor and enjoy!
Recipe Notes

Store in an airtight container in the refrigerator. You can enjoy them cold or warm in the microwave for 15 seconds to regain the fresh-from-the-oven deliciousness!
