Alkaline Chickpeas and Quinoa

Chickpeas and Quinoa are a delicious and healthy alkaline vegan alternative to black beans and rice.This recipe is for the alkaline vegan but it has so many wonderful possibilities. Not only is this dish satisfying and delicious but it is also packed with protein.

The Scoop

Proteins are made up of amino acids, nine of which are considered “essential” because your body can’t make them on its own. These amino acids bust be supplied by the food you eat, yet there are few plant foods that contain them all.

Quinoa is the exception – it’s one of the rare complete plant-based proteins on earth, making it versatile, nutrient-dense, and a delicious addition to any diet.

You can definitely have some fun with this one. Be creative and don’t be afraid to experiment. Always adjust the seasonings to fit  your taste.

Ingredients
Chick Peas
  • 2 cups Cooked Chick Peas or Garbanzo Beans
  • 1 cup Portabella Mushrooms chopped
  • 1 tablespoon of Olive Oil or Grapeseed Oil
  • 1 cup Red Onions chopped
  • 1 cup Red Bell Peppers chopped
  • 1/2 Habanero Pepper optional
  • 1 teaspoon of Agave or Date Syrup optional
  • 1 teaspoon Cilantro
  • 1 teaspoon Sea Salt
  • 1 teaspoon Thyme
  • 1 teaspoon Onion Powder
  • 1 teaspoon Black Pepper
  • 1/2 teaspoon Cayenne Powder
  • 1 cup Spring Water Or Veggie Broth
Quinoa
  • 1 cup Quinoa
  • 2 cups Spring Water
  • 1 teaspoon Sea Salt
  • 1 teaspoon Cilantro

Instructions
Chickpeas
  1. Wash, drain and chop the mushrooms.
  2. Heat oil in a large skillet over medium heat. Add the onions and peppers. Sauté until the onions becomes translucent.
  3. Add the mushrooms, agave, and all of the dry ingredients. Mix well and continue to sauté on medium heat for 5 minutes.
  4. Slowly add the spring water, stir to combine. Cook over a low heat for 5-10 minutes, until the water reduces.
  5. Add the cooked Chick peas and allow them to heat thoroughly.
Quinoa
  1. Bring the spring water to boil in a boiler.
  2. Add the Quinoa, Sea Salt and Cilantro.
  3. Reduce to simmer, cover the pot.
  4. Cook about 15 minutes until the water is absorbed. The cooked grains will be soft and translucent.
  5. Serve with the Chickpeas and Mushrooms. Enjoy! ~Bon Appetite~
