Agua Fresca de Tamarindo

Agua Fresca de Tamarindo or Tamarind Water is a delicious sweet drink made from ripened tamarind pods. If you are looking for a refreshing natural drink try Agua Fresca de Tamarindo or tamarind water, it is one of the many aguas frescas enjoyed in Mexico.

My version is tart, a little sour, a little sweet with a hint  of spice. I only used a 1//2 cup of agave because I no longer care for my foods and beverages to be overly sweet.:-)

Tamarind is rich in vitamins and minerals and is a healthy substitute for soda with your meals.Tamarinds are the fruit of the tamarind tree, a member of the fabaceae family which is the same family of plant as peas and beans. The trees are native to Africa but are now grown throughout the world in sub-tropical regions. The flavor of tamarind is loved in Mexico and it is used mainly to prepare tamarind paste, sauces and spicy candy like Pulparindo.

Ingredients
  • 1 1/2 pounds dried tamarind pods
  • 1 gallon Spring Water
  • 2 Cinnamon Sticks optional
  • 1 teaspoon Vanilla Extract
  • 1 cup Agave adjust sweetness to taste
  • 1 Whole Lime (squeezed and optional)

Instructions
  1. Bring half the water to a boil in a large pot over high heat.
  2. While you are waiting for the water to boil, prepare the tamarind pods: remove the brittle outer shell and pull off as many strings as you can; discard the shell and strings.
  3. After the water comes to a rolling boil, remove it from the heat and place the inner portion of the tamarind and the cinnamon sticks in the water. Let the tamarind soak for about an hour and thirty minutes.
  4. The water will have cooled down. Use your fingers to squeeze out the hard tamarind seeds and remove the remaining strings; discard them.
  5. Place the liquid and remaining pulp into a blender and process until the pulp is fully blended into the water.
  6. Run the liquid through a strainer, if you wish, or leave it pulpy.
  7. Pour your delicious Agua de Tamarindo into a pitcher, add the rest of the water, lime juice and agave. Stir well and refrigerate until cold. Serve over ice, if desired.
Recipe Notes
  • All the quantities in this recipe are approximate and can be tweaked to taste.
  • Add more spring water if you like a less concentrated beverage, use less agave if you want more tartness, etc.
  • Squeeze a juicy lime or two into your pitcher of Agua de Tamarindo for an extra pop of flavor.
  • Stir before serving and Enjoy
